INGREDIENTS FOR DOUGH (How To Make Pani Puri At Home)
Semolina 1 cup
All purpose flour 2 tablespoons
1/2 tsp salt
2 cups oil for frying.
METHOD (How To Make Pani Puri At Home)
To make the best pani puri at home pour in all three dry ingredients in a bowl and knead it with warm water. The texture will be like a dough, keep the dough aside for 30 mins covering a damp cloth on it.
Note: flour must be well and soft kneaded.
FRYING “THE MAIN THING”
Now take a cauldron or stew pot for frying.
Pour the oil, let it heat and on the other hand divide the dough into two that will be easy for you to roll, take a rolling pin. Roll the first part of dough in a circle now take a round shaped cutter, keep the cutter on dough cut round shapes. Do same with other part of dough.
Note: dough must be rolled thin.
Put pieces one by one in hot oil. Tap the piece with spoon and let it rise and get a round shape.
This measurement makes 20+ pani puri.
Lets make Tamarind water.
INGREDIENTS FOR TAMARIND WATER
1 cup tamarind
4 cups normal water
1 tsp salt
1 tsp chat masala
1 tsp dried ginger
1 tsp carom seeds
1 tsp black Himalayan salt
I bet that you can make pani puri at home with best tamarind water, add one 1 cup water in 1 cup tamarind and let it dissolve properly. Now turn on the flame.
Keep the pan add 4 cups of normal water, flame should be low initially, add tamarind pulp water without its seeds and stir it. Let it cook for 2 minutes.
Add all the condiments which are written above and again stir it. Let the flame on (medium)
GREEN YOGURT MIX
1 cup yogurt
1 fist mint leaves
1 fist coriander leaves
3-4 garlic cloves
1 tsp salt
1 tsp cumin seeds.
Leave the yogurt, grind all the ingredients and make a green paste. Beat yogurt and add in green mixture gradually. Your green chutney/raita is now ready.
CHICKPEAS AND FILLINGS:
Now boil some chickpeas, take 1 cup of white chickpeas. 3 cups of water and 1 tsp soda for rapid tenderisation.
Boil potatoes if you love potatoes in every thing. Cut it in cubes.
Cut 1 small onion and chop it.
Have 2 tablespoon of chat masala in a bowl and sprinkle if you love spice.
1 small bowl of daal sev.
Now take a Pani Puri make a hole in it with your finger so you can add fillings in it.
Add chickpeas, green chutney, onion chopped, potato cubes, sprinkle some sev and chat masala.
You Pani puri is ready to eat but don’t forget to have tamarind water. Put your Pani Puri in tamarind water and let it filled.
